Hi all im new here...done atkins before and had great luck!!!
I found a recipee for this lasagna that used crepes made out of almond flour...internet kicked me off before i could save it...does anyone know of this recipee??? |

As a way to counter the blood-sugar-bounce thing, my family has been replacing most-to-all of the flour in our regular pancake recipe with almond meal for years. If you do it ALL almond-meal, it will -- of course -- come out thinner. (No gluten, to stretch & let it rise). But they're so GOOD that way that no one minds. :) (And since you're making crepes, you want thin, anyway. :) ) And hello, folks! I did Atkins back in 2003, to clear up some blood-sugar issues I was having. A (Type I, since childhood) diabetic friend of mine had put me onto Atkins, convinced it would fix the problems I was having. It no only did... it cleared up my IBS, AND the pounds started dropping off like magic. Right until I got pregnant. I'd been doing a very strict version of Atkins with "planned cheating". (If I really wanted to cheat, and have, say Wheat Thins, I'd go get the box and calculate how many I could have for under 20 carbs... And pretty much make THAT splurge my entire carb-load for that day.) This may not be what Dr. Atkins recommended, precisely, but it worked well for me. I knew I couldn't keep dieting at the same level while pregnant. Going back on carbs was actually very VERY hard for me... I was so accustomed to skipping the starch part of a meal -- leaving the rice, eating a sandwich but leaving the bread (I could eat a sandwich out of its bread without swallowing an excess carb OR getting my fingers dirty!) Well, the first pregnancy didn't go too bad... By the time I was ready to go back on Atkins, I was back to the weight I'd been at when I got pregnant the first time! But by then I had a baby (who loved to stuff food in my mouth -- seriously!) and a husband who -- back then -- was very resistant. And I got pregnant AGAIN. Miscarriage.... ANOTHER pregnancy, and the last one was a doozy.... My baby was small, but I gained weight hard and fast, that time around. And it's never gone away. I tried to go on Atkins one more time, but hit a bout of major depression, and realized that stressing about what I could eat was just... one thing I didn't need. It was helping push me over the edge, into truly scary levels of depression. So... I set it all aside. Then this January, I got up, looked at myself, and was repulsed. I stepped on the scale... and I was horrified. A friend & I had already committed to going to the gym together starting in a few days; now I also committed to going back on Atkins. I did it from memory, not re-reading the book. Induction: 20 gm of carbs or less, you want to pee purple, leafy greens, no starchy foods, and you want to pee purple (on the strips). Got it. Started popping my nutriional supplements, and then we were off. Weight began coming off, though not as fast as my first time on Atkins. SOME of that may well have been the strength-training we were doing: Lose some fat, add some muscle, and it may take a while to show under all this flab, but in the end, it's a positive exchange. :) Still -- if we had GAINS (and we both did) it was generally after a day of hard weight-training, and generally we gained AT THE SAME TIME, so that tended to support the muscle-mass theory. Then... things went wrong. She had child-care issues and couldn't meet me at the gym anymore. My husband (by now a changed man from the one 7 years ago who insisted on French Fries with every meal, and quite supportive) made a beef-and-veggie stew that kicked me out of ketosis (we're still not sure why -- maybe too liberal with the mushrooms), I got horribly sick with a cold and wanted to EAT the stew, AND we traveled out of town. I declared I wasn't going to worry too much about my diet till I was better. Then, to make things better, my computer died, so I couldn't log into Fitday and track my weight/measurements daily. Two weeks went by... I didn't go to the gym, and I wasn't monitoring.... much of anything. I WAS eating salad rather than rice, skipping the noodles in home-made dishes, etc. Then my friend made a gym-date with me again, just as I was about to go back on my own, AND I got access to a computer.... I weighed in for the first time in 2 weeks. I'd previously set a goal-weight on FitDay, that was requiring me to lose 2.41lbs/week. Just as I'd gone off Fitday, my weight was noticably above that goal. (Remember -- I'd stopped exercising, and had eaten wrong... AND was sick.) Well, when I plugged in my new weight? My line paralleled the "Weight goal" line. Sitting back and doing nothing much but loosely following Atkins, I'd lost about 2.7 lbs/week. Since then, my weight has stalled again. On Monday, I baked bread (from scratch, by hand) for the first time... It was successful, and I'll be baking bread for the household from now on. (Whole grain, and *I* control what goes in), but... I ate some. (Under the circumstances, I almost had to). More than I should have. And... I had a couple (home-baked) cookies. And I'm about to travel to a convention where likely there will be much starchy food served. On the other hand, I just finished re-reading the New Diet Revolution. And I'm glad I RE-read it. There's so much in there that I didn't catch/appreciate the first time around. I may have had the original book (on loan from my friend), the first time I read it, because the one I just re-read didn't rant about trans-fats the way I remember. (It was there, but he assumed you knew this stuff already.) It DID go more deeply than I remembered into the link between processed carbs (especially sugar) and health problems. And I also got a refresher-course in how to boot your body into fat-loss, when your metabolism seems to have become (like mine) more resistant to losing weight. Anyway -- I'm feeling very gung-ho right now. :) I've got a really exciting weekend ahead of me (likely with lots of exercise), and eating may be a challenge even WITHOUT sticking to allowed foods. But I know very well that when I come home on Monday, I can get myself right back on a strict Induction diet until I'm in the purple again, and work forward from there. |

I suppose a lot of my grazing is an unhealthy response to anxiety. I am working on it. I have some real problems to work through. When you're hungry, especially, after dinner, try a handful of Macadamia nuts. DON'T just sit and eat them. DON'T keep an open bowl. Have a big container, and go get about an ounce of them. (ie: a tablespoon or so). Put that in a small bowl or coffee cup, sit down, and eat them, chewing thoroughly. (Don't swallow till there's nothing solid in your mouth. Chew each one all the way before eating the next.) When you're done, you likely won't be hungry anymore. (I know, I know -- nuts aren't technically on Induction. But since he uses Macadamia for the "fat fast", I've always figured they were OK to use for this stage and have, successfully.) Getting enough healthy fats is key on Atkins -- it's the thing that cuts down appetite! Put some cheese and hard-boiled egg on your salad! Switch to decaf (caffeine can trigger insulin-response, and thus make you hungry), and put real cream in it! If you haven't actually read the Atkins book, do so. It's a good read, not just a diet book. And you really need to, even if you've "done" Atkins in the past. |
LiterateGriffin...I have had a similar journey to yours--though with hypoglycemia, not Diabetes I. Now I have Diabetes II, but staved it off for 30+ years (instead of the 7-10 years the doctors gave me).
I keep a shot glass in the nut jar. One shot glass is almost 1/4 cup of nuts--the 'advertised' serving size. My mom gave me that tip. It's great...even the kids measure out a serving instead of grabbing a handful. |

Blew chunks last night. :( Today, my stomach is still unsteady... Part of me really wanted crackers/toast to help "settle" it.
Instead, for breakfast, I had one plain scrambled egg, and went looking for some seltzer-water. ("Flat" water did NOT sound good -- I was pretty sure I wouldn't be able to drink enough to take all my pills.) It's now 3pm. I'm getting hungry, but still wanting "comfort food"... So instead of sweetened rice, or crackers, I'm making some egg custard. 2.5 cups half-&-Half 3 eggs 24 "scoops" of Stevia (equivalent 1/2 cup sugar) 1 TBS vanilla 1/4 tsp nutmeg Whiz in blender till mixed. Put in well-greased pie-plate, bake at 425 for 20-25 min, until knife inserted 1" from edge comes out clean. This is all modified (by me) from a Good Housekeeping Custard Pie recipe. I tasted the raw mix (I know, I know -- Never eat raw egg), and it tasted like exactly what I wanted. Still have a few minutes before it comes out of the oven. I have a bottle of pure Stevia, that comes with a little scoop that's 1Tsp equivalent. There's 3 tsp in 1 Tbs, and 4 Tbs in 1/4 cup. Use whatever sugar substitutes you like. |

I used half-and-half because it was what I had on hand. (Costco sells it cheap.) I can't wait to try it again with full cream -- richer, and fewer carbs! :) I've been trying -- unsuccessfully -- to make custard for over 20 years, now, but THIS was easy. It was exactly what my poor sick tummy needed that day, AND made a wonderful treat the next two days. (It's all gone now... Guess I'll have to make more!) Thanks for doing a carb-count for me. For obvious reasons, I was not really "in shape" to do it the day I posted. But please -- take it and share. :) |

:pI've been on Atkins for a month now and lost 12 lbs no cravings, although I have been offered numerous cakes at work not a hint of temptation thankefully. Eating really good food varied, chicken, steak, fish, eggs, cheeses with veg and salad. Haven't missed bread for the time being. Although I will be having one or two glasses of white wine at the weekend. Here comes month 2 wish me luck

12 lbs in a month is GREAT WORK! And yeah, it's amazing how the "forbidden foods" just lose their temptation after a while. :) At this point, I've started baking bread for the family, as part of our effort to cut out processed foods/hidden nasty ingredients, and even though I'm filling the house with the smell of fresh baked bread... it's not tempting. (The first time I baked, I DID eat some -- rather had to, to make sure it was "acceptable" in taste & texture... but I didn't go crazy with it, either. If you feel like you need bread, make a MiM. Google it, if you don't already have the recipe. Have you discovered Linda's low carb recipe site? genaw.com On the desserts page, she has a recipe for Orange Cake that is delicious! The orange cake is for extended induction or OWL, but she has lots of induction-friendly recipes, too. |

Saturday night's dinner...Golden Corral
I love going to Golden Corral because they make the BEST steaks ever--even better than the Outback or Steak & Ale. I can also eat as many veggies as I want (without paying extra).
This time, I had two servings of steak, one serving of broiled mushrooms, squash, zuchini, and romaine lettuce topped with Parmesan cheese & blue cheese dressing. It was delicious! The place smelled of dessert, but I wasn't even tempted at all. I enjoyed the aroma of cinnamon rolls and cakes, but stuck with the steak and mushrooms. |

LiterateGriffin posted this recipe one day last week. I tweaked it to make it lower carb. I've made it twice now, and the one below is how I made the BEST custard ever.
Last night, I made it using 2 cups of heavy cream and 1/2 cup of water--and I used the Magic Bullet blender instead of whisking. Oh, my! The custard came out so smooth and delicious! My daughter laughed at me because I was enjoying it so much. Honestly, custardy goodness for 2 nC? Heaven! Low Carb Egg Custard Yield: 6 custard cups @ 2nC each 2 cups heavy cream 1/2 cup water 3 eggs equivalent of 1/2 cup sweetener 1 tsp vanilla Blend cream, add water and blend again. Add eggs and blend again. Add sweetener (I used truvia) and blend again. Add vanilla and blend again. Pour into 6 individual glass baking bowls (8 oz size), well greased, that have been placed in a larger rectangular baking dish. Add water to the rectangular baking dish to reach at least halfway up the sides of the individual dishes. Bake at 425 for 20-25 min, until knife inserted in the center of each dish comes out clean. (There are times that I remove 1 or 2 dishes and keep baking the rest...so, check each dish.) Thank you, again, LiterateGriffin! I LOVE this recipe! I will be making it once a week--great protein filled 'dessert.' |
Atkins and bread...
My kids requested Rueben sandwiches a few weeks ago...this meant that I had to go buy bread because we don't keep it in the house (it molds too fast). I wanted a Rueben, too, so I decided to make a rye MiM. Now, if you are still on Induction, this is not Atkins-legal, so don't make this if you are not on the last rung (grains).
Use your Atkins MiM recipe (Google it for variations): BASIC MiM (Induction-friendly, limit to once a day)1/4 cup flax meal (8.09 total carbs, 7.6 fiber) 1/4 cup flax meal (8.09 total carbs, 7.6 fiber) 1/2 teaspoon baking powder (0.64 net carbs) 1 packet splenda packet (0.9 net carbs) 1 teaspoon cinnamon (1.84 total carbs, 1.2 fiber) 1 large egg (0.6 net carbs) 1 teaspoon butter Put the dry ingredients in a coffee mug. Stir. Then add the egg and the butter. Mix. Microwave 1 minute (or more). Take out. slice, butter, enjoy. Cream cheese would go nicely, too. The shape of this can be changed by making it in a bowl. It can be "toasted" once it's cooked. The cinnamon can be replaced. I would imagine that any sugar free syrup could be added. Some people count the flax as a carb/fiber wash, so then the net carbs would be 2.78. I do NOT like the basic MiM recipe. I make a savory MiM--replace the sweetener and cinnamon with garlic and/or onion powder. I usually use olive oil instead of butter (because I don't have to soften it). RYE MiM variation (NOT Induction-friendly) 2 TBS flax meal (8.09 total carbs, 7.6 fiber) 2 TBS rye flour (high in carbs, don't have the carb count handy) 1/2 teaspoon baking powder (0.64 net carbs) (optional) 1 tsp carraway seeds 1 large egg (0.6 net carbs) 1 TBS olive oil Follow directions above... |

Read it. Understand it. Realize it's a lifestyle change. You will never stop eating like this. If you decide to go with it, don't experiment with the induction phase. Later, you'll get a little room to try different things, but once past the first two or three weeks, you'll understand that starches and sugar are responsible for making you fat, and you'll avoid food that contain unnecessary amounts of carbs and sugar. Above all, don't make up your own diet. The silliest posts imaginable start with "I'm on a modified Atkins, ..." Uh, no they're not on Atkins. They're on "A Goofy Made-Up Eating Plan That Stole the Atkins Name Diet" Best of luck. |

Rikey -- you can usually pick up one of the Atkins books cheaply at a used bookstore. Last time I bought one (within the past 3 months) I paid $1. Buy it, read it, live it, love it. You'll have to change a lot of your thought-patterns, about what constitutes "diet food"... But you'll find yourself eating rich, healthy foods that leave you full and satisfied, and marveling at your increased energy and well-being... and by the way, the weight will fall off! Dread -- I'm on "Modified Atkins". Mine's modified to COMPLETELY exclude zucchini in any form. ~laughing~ If you read the book, he encourages folks to modify the plan to suit their individual body's needs.... I agree, however, that one must still stay within the guidelines for it to be effective. |

Ugh... That sounds terrible. (And I've got a tendency to use a lot of NSAIDS, for various reasons) I can't imagine having to do without nuts! I suppose seeds are out, too?

Mrsrs: Thank you for (re)posting those percentages. I'm in the fortunate group that only needs to lose about 15 lbs., but they're TOUGH to get off and with the change of season, may require buying yet more "big girl" clothes. I could just scream, my carb intake has been between 20-30 gms for 3 weeks, and I actually gained a pound. Will work out a bit more, try to get more sleep, and hope hormonal changes have done their worst.

I never did try the Atkins, but I do the Paleo Diet, which is very similar in that it is low-carb. It produces similar results for that reason.
Any serious weight-loss diet has to mean low-glycemic eating, if you don't want to torture your appetite and burn muscle. I like Paleo better for the ease of understanding what's good for eating and various aspects of it, but if getting rid of all the excess water weight and body fat is the goal, either one will do the job nicely. |
Agreed -- Paleo and Atkins are VERY similar. I do Atkins because I was introduced to it first, and have read the book at least twice now, so I have a pretty good feel for it.
I'd have a harder time on Paleo, I think, because of the lack of dairy. You can take away my butter when you pry it out of my cold, dead finger! ~laughs~ But I'm on another forum just for LC dieting, and I think we have as many Paleo folks there as Atkins. From what I've seen, the two are largely compatible... If a Paleo and an Atkins follower went out to dinner together, their plates would look VERY similar... Particularly as a lot of Atkins folks avoid most dairy... and once past induction, many of us introduce small quantities of fruit. |

For Atkins, of course, you can add some seeds (pumpkin, sunflower, flax) back in once you have finished at least 2 weeks on Induction. |
Atkins
Yep I am doing Atkins. I did it back in 2005 and lost 35 pounds in 3 weeks. It took 2 attempts for me to get through the induction flu stage but once I did it, the weight just fell off. I will add that I was hitting the gym doing aerobics and step classes and as much cardio as humanly possible and it was difficult as my muscles really felt it without the carbs in my body but I I managed and did my 1st aerobics class yesterday. I will say boy am I feeling it today but I shall soldier on and am looking forward to meeting others who are also on the same journey I am on. I will add I quit smoking 12 days ago as well so keeping the weight off is a must for me. :)

Yep I am doing Atkins. I did it back in 2005 and lost 35 pounds in 3 weeks. It took 2 attempts for me to get through the induction flu stage but once I did it, the weight just fell off. I will add that I was hitting the gym doing aerobics and step classes and as much cardio as humanly possible and it was difficult as my muscles really felt it without the carbs in my body but I I managed and did my 1st aerobics class yesterday. I will say boy am I feeling it today but I shall soldier on and am looking forward to meeting others who are also on the same journey I am on. I will add I quit smoking 12 days ago as well so keeping the weight off is a must for me. :)

I highly recommend that you do. It really works if you follow it exactly how it says. I lost 35 pounds in like 3 weeks back in 2005 on it and have restarted it again this week. It does work. Good luck if you decide to go for it :)

If there is a diet that works it's this one. I went from 220 to 160 in under 5 months. I went back up to 190 over the next sixth months but I've managed to shed 8.8 pounds in two weeks. My body fluctuates like crazy. It's really easy for me to lose and gain. Stay with this plan though. Reach ketosis at all costs, its worth it.

For the children, we make them sweet. Then we form them up in little "tea-cookie-sized" balls (around 1 teaspoon) and push a raisin in the top, and call them "cookies". I was on this years ago and dropped from 282 to 202, but I let depression win out and I gained it all back and then some. I have dropped 40 to 60 pounds on 2 or 3 other occasions.
I stayed in induction for a month and dropped 30 pounds. I have now added nuts, berries and veggies like peas and green beans. Now, after 51 days of Atkins I have dropped from 300 lbs to 259.6. So what's different this time. I'm going to make a lifestyle change. I am going to exercise. I am going to get my weight down under 170 and I am going to be a running machine (the rest of my family runs--I have people to do this with). I never feel bad on Atkins like many people report. From day 1 I always feel better. I have started running now and I'm up to 1 mile per day (I know, not exactly the Boston Marathon, but I'll get there). The only discomfort I do experience is diarrhea the first 1-3 weeks. I also have developed a severe Diet Mtn Dew addiction. |

Not bad carbs but apples, bananas, whole grain bread, oatmeal, etc. Then go back to three days under 20 carbs. It has helped me stay on the diet and I am actually losing weight like crazy. I was having long plateaus on just doing 20 carbs or less a day. I can stick to this better because I know I can have the higher carb fruits and veggies and that forth day.

I posted this earlier in the newbie thread. I was guided to this thread and may I say I am looking forward to others insights, info and recipes. New to FD. I am trying to navigate the site so forgive me if I post in the wrong category. I started May 30th @ 303lbs. I can't tell you how difficult it is to say that #. My husband doesn't even know my weight. But if I have learned nothing over the years I have learned to just spit it out and get over it. So here I am. I started Atkins. Dr. said I have a fat tooth not a sweet tooth. 1st time I heard that one. But while thinking about it I would much rather have anything with butter then a candy bar. Sugar, carbs and my body don't get along. And with the injuries I sustained after a fall several years ago I can't exercise nor get good cardio. I am hoping this is the answer for me. I am currently down in weight and want to continue on this strong start. If anyone has any suggestions or recipes, feel free to get in touch. C-ya on the scale. Connie |
Losing to fast?
Should I be concerned that I am losing weight to fast?
This is my 6th day on Atkins and I am down almost 14lbs. I have gone over my charts and I have been taking in approx 35 grams of carbs a day. I upped my carbs on day 3 because of the loss in a couple of days. Not sure if I need to add even more carbs. Is the weight loss to extreme? Will it slow down in the next week? It will slow down. Make sure MOST of your carbs are coming from vegetables and watch that you are staying in your limits. You have a lot to lose and if this is your first time low carbing it is not uncommon to get a great result in Induction. You may see no loss or very little the following two weeks as your body adjusts. Thats OK. Just stick with it. This is not a sprint it is a marathon.
If you follow the book (my favorite is the 2002 version) and don't stray you should do fine. Move on to Ongoing Weight Loss after your two weeks in Induction. Take your time moving through the testing phases. This is a lifestyle. I have been on Atkins for ten years (I detoured a few times). My bloodwork is perfect and I have lost 92 pounds so far. It is the BEST way for my body for sure. |
