Oh, Oh, Oh! I had a really long post I had composed and cut and pasted from WordPad without saving the document, thought I had posted it here, deleted it from WordPad, and then discovered I had accidentally cut and pasted a post of mine from earlier today. LOL
So here's an abbreviated version:
Joanna, thanks for clarifying type 1 vs. type 2 diabetes. I get it now. But I am interested in why it's harder for you to manage your blood sugar when trying to eat more healthfully? Is it because of peaks and plummets from pasta and maybe the starchy veggies and protein shakes and stuff? If so, maybe we can give you some suggestions. For instance, I have found that eating Dreamfields lower digestible net carb pasta rather than whole grain pasta helps avoid the peaks and plummets, as does eating lower carb fruit such as berries and melon as opposed to higher carb bananas and apples. My protein shakes are just 1 net carb and are pretty good--can adjust the powder to as thick or thin as I want the shake.
Quinn, I'm going to ask Santa for a pastry chef for Christmas. LOL

Muna, congrats on a good first day back. What are biccies? Like our American biscuits or scones maybe? I need to try hummus. Maybe I can find a recipe for that using black soy beans and using low carb veggies to dip into it. Thanks for the idea.

Terri, are you glad to have the warning of oncoming cluster headaches due to your girlie cycle or change of seasons, or would you rather not know they're coming? I'd think it would be akin to my dreading going to the dentist--I about sink into the chair from metal just touching my teeth. My bro lives in Gulfport, near St. Pete--haven't talked to him in a few days--forgot he's probably suffereing more than I am!
Hope, the hot car after tacos and a margarita sounds awful! I hope you're feeling better now. Well, you are so sweet. I think Katherine must be really proud of you. She sounds wonderful and I'm so sorry for your loss. I firmly believe that people in Heaven can hear us when we talk to them. I hope you feel her spirit with you as I do my sister who passed away in 2005. I miss her less when I "talk" to her. Are you going to tell us who her actor child is? If you'd rather not, I perfectly understand. Big hug to ya!

Report card for Tuesday
I had a wonderful day today. I had an amazing run this morning, went to work, finished early and then spent close to 2 hours walking around the neighborhood with friends and dogs. We all stopped for ice cream but I resisted! I didn't feel at all deprived because it was such a lovely summer evening!
My goals:
1. Eat between 1100-1400 calories per day. YES 1124/ YES 1210
2. Calorie deficit of 550 or more per day. YES 936/ YES 850
3. Exercise 5 hours. 45 min.
4. Take my multivitamin. YES/ YES
5. Eat over 30% protein. YES 42%/ YES 33%
6. Drink minimum 10 glasses of water per day. DONE!/ DONE!
7. No sugar. YES!/ YES!
8. No wheat. YES!/ YES
Other goals:
1. Put up the new shelves.
2. Put up the solar blind in the kitchen.
3. Water the flowers. It's raining!
4. Wash the living room pillow cases.
5. Edit first cut of friend's wedding video.
Mern, I am so thrilled that you are enjoying the Silver Sneakers class at the Y. How amazing that you're doing it! GOOD FOR YOU! And thank you for always being so positive and so supportive!
Amy! Thank goodness you're back. I was starting to wonder... as for your daughter, no one knows better than you what her needs are, and besides, we're talking contacts here, it's not like she's getting a boob job.

Terri, first of all - so glad that your headaches went away. Let's hope they stay away forever. Second - I love tilapia! I love most fish actually. How do you prepare it? Tonight I grilled some cod on the BBQ. I brushed it with basil pesto and then marinated it in lemon, garlic, fresh basil, some smoked chipotle and sea salt. It was DELISH! I am so into my BBQ, it's crazy. I also grilled some zucchini on there and it was like candy!

Hey Mern, it's not such much that it's more difficult to manage, it's just that eating well is kind of a new deal for me. I mean, I've been eating pretty decently for the last six months while I finally managed to get my diabetes under control, but it's just in the last month that I've put concerted effort into calorie counting and eating more fruits and veggies. Because of this, my insulin levels are suited to someone who eats more and more erratically. Now that I'm eating better, the levels are way too high, and it's a work in progress to figure out which doses need to be adjusted, by how much, and when. It's great that I'm reducing insulin amounts, just a pain while I figure it out. Also, I don't really trust myself very well when it comes to making good eating decisions, so a part of me is worried that I'm going to fall back into old habits and have to readjust all over again. Anyway, enough about me!

**food porn warning**
As I sit hear I can smell this aroma fill the air. You'd swear that it's grandma's apple pie. I can smell a hint of cinnamon trying to mask the sweet smell of the Granny Smith Apples. Grandma must have been in the kitchen pealing apples and preparing this delectable treat for HOURS. But wait... grandma has been gone for many years and I know what's in the over! I hate to admit it but grandma's apple pie can't shake a stick to the treat that I'm about to enjoy. Not only that but I made it myself and the prep time was only a matter of minutes.
Can it possibly be THAT good and THAT easy? Yes it can.... and it IS!
As I peek into the oven I can see the crust starting to brown on my apple cobbler. The apples are starting to bubble up around the edges. This is the same sin that I fall victim to almost every time I need my "sugar fix". In my opinion this takes presidents to the beloved Butterfinger Blast, yes I said it. The Butterfinger Blast can't even touch this. This is in a league of it own... well next to my Rum Cake. I can not resist this at all. In fact I'm preparing to have my tongue and the roof of my mouth scorched b/c I know I can't wait for it to come out the over and cool off. The only thing that can settle the burn would be a nice scoop of vanilla ice cream.
I will post the recipe below. Eat this with caution b/c it will suck you in and control your senses. I can not with a good conscience post it for everyone to see b/c this stuff is like crack. I'll have it below posted in white. I have to do this because it is THAT good and it IS addicting. If you want to see it, just drag your mouse over it to highlight it.... but you've been warned.
All I ask is one favor, if you try it, or have already tried it just report back to me and let me know if it got you hooked as well, so I don't feel so alone.
Prep Time: 10 Minutes
Cook Time: 45 Minutes
Ready In: 55 Minutes

Had a wonderful, relaxing day today. Got a lot of odd jobs caught up around my own home, so now I feel much more organized. Overate a little at supper but, at least, it was really healthy.
Mike, glad to hear everything went well. I copied your recipe to give it a try. Sounds really good! I imagine you could use any flavor pie filling, too. Peach comes to mind, Mern and Cassie... lol Blueberry, cherry, oh man... I'm getting hungry again!

*Limit bread intake to two 45 calorie slices a day. (I'm obsessed with bread lately...) none
*Walk daily; 3 mile minimum. yes
