Question Salmon skin

When we get the nutritional data for cooked salmon, for example, does it assume that the fillet has been skinned? And, if skinned, when - before or after cooking? Arenít a lot of the beneficial fatty acids and omega-3s found in that layer of fat just under the skin? And wouldnít they be lost if we skin the piece?

Great question. I think fitday's values are based on the FDA
I tried to see if I can find something there to indicate how they estimated it but I did not.

Salmon skins taste good when you fry it.Salmon is a great fish for weight loss.Salmon is full of vitamin D and calcium both good for dental health.

Default Salmon skin

First off: the benefits. Everyone knows that salmon is full of healthy fats, but much of those are actually stored in the skin. Omega-3's, known to help prevent heart attacks, are found in the salmon's fat and get absorbed by the skin during cooking. Plus, the skin will help the meat retain its moisture as it cooks.
