Forgive my lack of measurements- I think 'to taste' is how I do most things.
Spinach Strawberry Salad
1 bag of baby spinach (prewashed and trimmed)
1 quart of strawberries
1/2 c to 1c of almond slices toasted in a dry frying pan
dressing
1/4 c white wine vinegar
2 tbsp olive oil
1/4c to 1/3c white sugar (start with a little and add as you need)
1/2 to 1tsp paprika (I like the bite, so I use more)
2 tbsp sesame seeds
1 tbsp tiny diced red onion
shake it all together in a jar and refrigerate until the sugar dissolves before you toss it into the salad. Serve as soon as you add the dressing- in a few hours, the spinach will wilt from the vinegar.
Souvlaki
chicken breast cubed and skewered with onions
drizzle with lemon juice, olive oil and then season with sea salt, fresh ground pepper and oregano- grill these up
your favorite whole grain pita or flat bread
drizzle with olive oil and season and grill these too
Tsatziki Sauce (recipe here)
1 large Fage Zero Greek yoghurt plain
2 cucumbers peeled, halved, seeded and then shredded with a cheese grater
1 tbsp chopped garlic
1 to 2 tsp fresh chopped dill (I use more)
salt pepper
Mix up all of the sauce ingredients. When the chicken and pitas come off of the grill, make yourself a Souvlaki!
I hope you like these. I've got a ton. Sorry for the lack of measurements again, I only use my measuring spoons in baking.
