I tried the viral cottage cheese flatbread, and it surprised me. Blend one cup of cottage cheese with two eggs and a pinch of salt until smooth. Pour onto a baking sheet lined with parchment paper, spread thin, and bake at 180°C for 30 minutes. It becomes a soft, bread-like wrap. I use it for sandwiches or pizza bases. One flatbread has about 35g of protein and only 300 calories. Great for low-carb days.
