I used to hate boring diet food until I discovered roasted vegetable bowls. I chop zucchini, bell peppers, red onion, and sweet potato, toss with olive oil and paprika, then roast at 200°C for 25 minutes. Serve over quinoa with a spoon of Greek yogurt. The sweetness from roasted veggies makes it satisfying, and I prep four portions on Sunday. Each bowl is around 450 calories, keeps me full for hours, and actually tastes good.
