For low carb, eat non-starchy veggies such as green beans, cucumber, broccoli, cauliflower, bell peppers, spinach and other greens, mushrooms, pumpkin, summer squashes, zucchini, and tomatoes. There are quite a few to pick from.
Stay away from corn, potatoes, peas, winter squashes, and beets.
