Am I going about this wrong?

Greetings to all,
So I'm a little concerned that I'm going about this all wrong. I'm 6'4 345lbs, post bariatric (R-Y in 2005, long story why I'm here). I've been trying to really to turn over a new leaf for 2010. I have stopped drinking Monster (Blue). Been off that for 4 weeks now and I have been tracking my food for the last week. I've started walking 1.5 miles twice a week. I feel exhausted all the time. I have my calorie intake mostly under control (avg 2300/day), but I'm worried about my fat intake. I can't seem to get it under 60g/day (avg 80g)...
My breakdown for the week looks like this..
