Sweet potato and/or yam peel/skin nutrition

Question Sweet potato and/or yam peel/skin nutrition

We bake a batch of sweet potatoes, then open them up, scoop out the flesh and put the peels aside. Which I love to eat instead of a scoop of (delicious) butter-added mashed sweet potatoes. Anyone know where I might find nutrition info on the peels alone? (Baked white potatoes skins, too...)

Smile sweet potato chips

You can dehydrate the sweet potato/yam skin in microwave or deep fry them with salt.They don't have the starch that can be harmful for teethes and they taste better too.
