Easy, Quick and Healthy Office Lunch
 
I found this great recipe and thought that it could be easily made into an office lunch.:)

This recipe is divided in 2 parts and can be made using a Microwave only.

Quinoa Pizza Bowls

Ingredients
  • Cooked Quinoa
  • Chopped veggies(whatever you like)
  • Skim Mozzarella Cheese
  • Pizza sauce
  • Any seasoning or chilli flakes you prefer

Part 1: Cooking Quinoa
  1. Add 1 cup quinoa and 2 cup water in a microwave-safe bowl.
  2. Add salt according to taste.
  3. Cover the bowl with microwave-safe lid or aluminum foil.
  4. Microwave it for 15 minutes.

Part 2: Making Quinoa Pizza Bowls
  1. Put pizza sauce in a microwave-safe bowl
  2. Layer quinoa on top of the pizza sauce
  3. Cover the quinoa with shredded cheese
  4. Add finely chopped veggies
  5. Top the bowl with more shredded cheese
  6. Sprinkle some chili flakes on top
  7. Top off with a little capsicum and carrots
  8. Pack the bowl in aluminum foil and take it to office with you.
  9. Pop in the office microwave for 2 minutes and your lunch is ready.

Hey BoGum some alternatives include buckwheat, barley and brown rice :)
