Good morning everyone! My weekend was awful--carb overload--so I'm going to have to make healthier choices today.

Goals
1. Drink 6 glasses of water.
2. Keep to carb limit
3. 4 servings of fruits and veggies
4. Exercise 3X

Personal goals
Tidy my own bedroom
Journal (this is the way I relieve stress)

Good morning Jenn and thanks for starting us off. I guess it's about time for me to jump back on the wagon. I'm tipping the scales at 201.0, I haven't been over 200 in over four years!

Hi everyone! I am wishing you all a good week. I hope it's more active in here that last week. I lost four pounds last week. Yay.

Mike: Good to see you on here again. I'm glad your back on the "wagon" again. Good luck! :)

Jenn: Weekends are the hardest for me, too! Good luck this week lowering your carbs and meeting your goals. :)

Week goals:

1. Log everything I eat daily
2. Stay under 1,200 calories/day
3. Push myself to walk faster
4. Do daily stretches for better health and to relieve stress
5. Walk with walking buddy in the evenings (my daughter)

I had my blood work done this morning and after I went to Tims for breakfast. Bad idea. My weight is still up from two weeks ago. 175. I will
work on getting more exercise this week.

I am uncertain about setting goals as I am traveling again re: my son's eye surgery (the office is 5+ hours away). I don't know.........something like exercise reason I guess. Plus I am attending 2 all day conferences. It's gonna be an out of the ordinary week.

I forgot to weigh this morning, but if I'm up on the scale it would be from water retention which comes off more easily than gained fat weight. I didn't log my food today, but know for sure I ate low cholesterol, low sat fat, and stayed in my calorie range of 1200-1600. Spent a good part of the day making homemade low carb soup with fresh veggies from DH's garden. I thought DH would eat that for dinner along with a sandwich, but he wanted to eat soup for a snack tonight and have a sausage and peppers casserole for dinner, so I had to go back outside to pick more fresh veggies for the casserole. But both dishes came out great. My son came in, said the soup smelled so good and asked if he could have a bowl of it. Then he saw the casserole and had some of that, too. :)

Jenn, wishing you better carb control this week. It's not always easy, I know. Best wishes with your goals.

Count Mike, glad to see your goals posted-- ah, ah, ah!

RenewedSoul, I hope to be able to take a more active part in our thread this week. Nice that your daughter is your walking buddy. :)

Libby, I thought about you when I got up this moring. What kind of food is at Tim's? I'll try with you to exercise more this week.

Nyda, very nice lunch! :) I took three of my grandkids to a buffet for lunch and had roasted chicken, brussels sprouts, cooked spinach, green beans, and strawberries with artificial sweetener. I did also have about a tablespoon of cocktail sauce (which would be like catsup/ketchup and grated horseradish) on some steamed shrimp. But that was my only cheat.

Robin, when is your son's eye surgery? Why do you have to travel so far--is it because the surgery is unusual? Just do the best you can this week under difficult circumstances--don't sweat the small stuff. Big supportive hug to ya!

Libby, yeah, there are restaurants here like that, too where everything is delicious, but high carb, high fat, and high calorie except for a side of broccoli--and the salads are nutrition void iceberg lettuce. Nice Monday report! Kudos on your walking today!

Evening all. I went shopping in three different stores so got a lot of walking in today. I went through the grocery store and didn't buy any junk food. This evening I am working on cross stitch picxture for a friend so far it has taken 18 months. It is 20 inches buy 27 inches solid 18 count adia. Almost to last row. At least I'll be moving my arms.
I am finding it real hard to stay away from the not so good food. I have a not full feeling alot, but that will pass as my body ajusts to less sugar and fat.

Hi all! I'm back from the family reunion. The Maine lobster stocks have been decimated, potato chip stocks have taken a sudden uptick, and somehow I am down a pound. Must have been all that hiking. My knees may forgive me some day. But it's time to be serious again if my winter clothing is going to fit when needed.

Goals:
1. Weigh, measure, and record everything eaten
2. Keep calories at 1400
3. Two liters of water per day (to wash away all that vacation salt and sugar)

Welcome back Mel-Mc. Not many people lose weight while on vaca. I am with you on wanting my winter clothes to fit. Tuesday seems to be a better weigh day for me. I am at 173.1 this morning. Evening walks will be part of my routine from now on.

Hi all! I hope you all are doing good with your goals! In a few weeks, I should reach my halfway point! I am getting excited. I will then share my story along with pictures that I have been capturing the steps toward my health journey.

Libby: Nice job on the weight loss!

Adyndravo1: Yes, junk food is an evil temptation at times. It will take time to not feel hungry, but the hungry feeling quit after a couple of weeks for me. I used to cross stitch huge pictures that ended up looking like paintings. I miss that hobby. I am hoping to start that back up when I have more spare time. Maybe you can post a picture of it when you are done? I would love to see it. :)

Robin: Traveling is a difficult time when it comes to weight loss. I hope everything turns out good with your son's eye surgery.

Mern: The homemade veggies sounds great. Would you mind to share the recipe? :D I am always looking for something new to eat to break up the boring pattern of vegetables for every meal.

Mike: Your goals are looking good this week. :)

Ian: Your goals are looking good this week, too. Yes, I have had good days the past 3 months, even though some have been very emotional. The three last months are starting to shine over the bad few years I allowed myself to experience. I will never allow myself to become so unhealthy that it interrupts my life again.

Mel-Mc: Welcome back! Your family reunion must have been great.

Jenn: You seem to always get your exercise goal accomplished. That is one area I am lacking in. I need to step it up and increase my exercise.

Thanks RenewedSoul. We have had so much rain this summer that I've had to cut the grass more often. That and cleaning (lugged 2 big bags of garbage to the curb) is not exactly "fun" exercise but it counts!

Have beef stew cooking in the crockpot and have to figure out what to put with it. Hmm I think we have fresh green beans. Lots of veggies :)

RenewedSoul, I don't have any cut in stone recipe for either my homemade veggie soup or for the sausage and peppers casserole with fresh veggies. I mostly cook by "dump and taste" method, but I could "guesstimate" how much I use of each ingredient and tell you how I cook it. Which one did you want--the soup or the casserole?

Homemade low carb veggie soup:

I make this with whatever low carb veggies I have on hand. Sometimes I add precooked meat, sometimes I make it vegetarian.

I save meat juices from cooking meats in the crockpot or oven, cool and skim off the fat, then I freeze it until I accumulate enough to use for a soup stock. Sometimes it's chicken juices, sometimes beef or pork, sometimes a combo. If I don't have any stock, I used sodium free granulated beef or chicken bouillon reconstituted in water. One could also use ready-made canned or boxed stock.

Soup ingredients:
--Veggies to taste: I add what I like in whatever amounts I feel like using that day. My most commonly used veggies are:
shredded cabbage (actually never make soup without it) sliced celery, green beans, broccoli and/or cauliflower, and fresh or canned, peeled tomatoes. Sometimes I also add black soybeans or whatever leftover veggies I have on hand.
--Meat stock: either homemade, canned, boxed, or reconstituted granulated bouillon.
--Water, if using granulated bouillon
--Spices and seasonings to taste: Use what YOU like to taste. I use salt or salt substitute, Worcestershire Sauce, lemon juice, dehydrated minced onion, dried Italian seasoning, chili powder, and a couple dried bay leaves. Sometimes I add extra granulated bouillon for extra flavor.
--Optional and added at the end: already cooked, diced meat.

Method or directions:
1. First shred cabbage and chop or slice veggies. If using fresh tomatoes, peel them first, chop or dice and set aside, reserving the juices. I dip my whole tomatoes in boiling water until the skin breaks (30 seconds or so is usually enough) then put them in cold or ice water until cool enough to handle--and then cut or dice them as desired. NOTE: if using veggies that are already cooked, add those after the fresh veggies are cooked until desired tenderness.
2. Place all your veggies in a pot, including any juices from the tomatoes. Add meat stock or water and bouillon to cover veggies.
3. Add spices and seasonings to taste. Go especially easy on the lemon juice-- maybe 1/8 teaspoon to a 2 quart pot of soup which just adds a bit of brightness to the flavor. (Vinegar also works in place of lemon juice) Taste as you go along--better to add too little of some seasoning--can always add more at the end of cooking.
4. Cook until fresh veggies are tender.
5. Add any precooked veggies and/or precooked meats.
6. Adjust seasoning if desired. BE SURE TO REMOVE BAY LEAVES BEFORE SERVING--THEY ARE NOT EDIBLE AND ONE COULD CHOKE ON THEM.

First week weigh in after my first week sees me lose 6lbs!!!!
I'm extra proud of myself that I've resisted buffet food and cakes from colleagues on 3 occasions. I've been drinking so much tea to keep me away though. Really should balance this with water!!
Kiddies are staying with grandparents tonight and to save me going in cupboards I had a lovely long soak and pamper session. Followed by some 0% fat Greek yoghurt with fresh raspberries. 1 litre of water by my bed whilst having some me time.

Another week ahead...soon be time to shake the dust from my at moment too tight clothes!

I'm sure my sausage and peppers casserole would also work just fine as a vegetarian dish.

No real recipe, but here's what I do:

Use however much you like of each ingredient you enjoy.

Ingredients:
--pasta (I like rotini or penne rigate, but you can use whatever you like)
--olive oil
--fresh green bell peppers
--fresh onion (whatever kind you like)
--tomatoes (peeled canned or peeled fresh) with juice--I use at least a 14 1/2 ounce can or two large fresh tomatoes for each 2 cups of cooked pasta
--salt or salt substitute
--dried Italian seasoning (start with a little and add more to taste)
--optional that I very rarely need: a little canned tomato sauce or spaghetti sauce
--optional: grated Parmesan cheese
--optional: precooked turkey sausage that is already heated through

Directions:
1. Cook pasta according to package directions. Drain well.
2. While pasta is cooking, saute in olive oil in a preheated skillet sliced onion and green peppers until desired tenderness.
3. Add peeled tomatoes with juice and the drained, cooked pasta. Season to taste. Heat through.
(Note: I usually don't need to because DH and I don't eat it very saucy, but if the tomatoes I added don't make it saucy enough, I'd add a little canned tomato sauce or spaghetti sauce)
4. Season to taste
5. If desired, add optional sausage that is already heated through.
6. At the very end stir in optional grated Parmesan cheese.

Meeting with the contractor tomorrow about more work on restoration of daughter's house from water damage. Now just ceilings in two rooms replaced and one bathroom wall to be reconstructed. I will be so glad when all this is behind us!

Hii all. I have been busy cleaning beadroom closet and linen closet and bathroom. Things are looking good. I can't find the broom though. I used the vaccuum in the kitchen but it does not get under the toe area.
I have been really good so far this week.

I weighed myself this morning and as usual, I had a good loss (or water weight I'm sure). I was down 3.8, that seems to be how I start my week, then by Wednesday or Thursday, I'm gaining it back. I'd like to keep the 3.8 loss but if I can finish off the week 3 pounds down, the Count will be happy.

Thanks, it seems as if I almost skipped right past the 190's though. Great job on the deficit. That must have been one hell of a workout!

Nice recipes Mern. That sausage and peppers casserole looks like something we'd all want a second portion of.

15 year old walking buddy? Careful there RS, that's the kind of thing people mistake for illegal :)

Mike, it was split into 2 workouts that were both fairly tough, just need to push myself harder because that feeling when you know you're doing something well really motivates you further.

Tuesday goals fell short a bit, but Wednesday is starting out well so far.

Be careful with the carrots, I believe they have a lot of carbs.


This morning I was 195.6. Down 4.4 in 2 days. Gotta keep pushing!

Nyda: To answer your question, that is another form of weight measurement in other countries. You can Google and convert the numbers or stones to see what it is in pounds.

Good job every body. I got my hair cut and styled today. This was my reward for getting under 175 lbs. We need to pamper our selves once in a while. I am feeling good about this week.
