Quinoa
I was raised on it, high in protein and very filling. This is a recipe from back home:
1 cup quinoa 1 can crushed tomatoes 1/4 can tomato paste 1 small onion 2 celery sticks, finely diced 1 small pack of goya aderezo/recaito (you'll find it at most Latin stores) 2 tsp garlic salt and pepper to taste Add the garlic, celery stick and onion, cook over low heat until onion is transparent, add tomatoes and tomato paste, mix, add quinoa, add enough water to cover mixture, bring to a boil, let it simmer until quinoa looks like angel halos. Check and add more water as needed. |

I agree, it is just another grain/pseudocereal. It is, however, gluten free and for people who suffer from celiac disease this is one that they can eat. (wheat, oats and rye all contain gluten) My sis-in-law is celiac and she can eat this grain.
