Raita
Raita is an Indian dip/dressing that is very easy to make, and very tasty. I will say, however, that it can turn out a bit spicy, so be prepared.
To make Raita, you will need:
- 1 cup of nonfat plain yogurt. Use whatever you have that is healthiest
- 1 large cucumber, peeled and chopped
- 1/2 tsp. coriander
- 1/2 tsp. cayenne pepper
Just throw everything into a food processor and mix it up. This makes about 2 cups of raita. I use about 1-2 tbsp. as a dressing on salad. It's a very light, flavorful sauce and has a low calorie count.
