Easy Zucchini boats
We eat these often. This usually makes enough to feed 4 people.
Boil 8 medium sized Zucchini till soft. let cool. Cut them into two length wise. Scoop out inside. Set aside. lay skins in a lightly oiled baking dish. In pan saute a bunch of green onions, garlic to taste and basket of sliced mushrooms. Once it all gets softened add the insides of the zucchini and a can of diced tomatoes. Add oregano, parsley, salt and red pepper to taste. Just before removing from heat add an ounce of blue cheese. mix well, this will make it taste quite rich without adding a ton of calories. Add the mixture back into the zucchini skins and sprinkle with a little Parmesan. Serve and enjoy. |

I never liked zucchini before until recently, I am now eating zucchini chips instead of the usual potato chips. I will definitely try this recipe. Thanks for sharing!
