Cottage Cheese Pancakes
Something I make often. Low calorie and not bad at all. I really like this in the little blender with herbs like Rosemary and sage and bit of Thyme.
Cottage Cheese Pancakes
1 egg
¼ to ½ cup low fat cottage cheese
3 T flour
sprinkle of cinnamon
1 pkg Splenda
dash of vanilla
blueberries
Mix all ingredients except blueberries. Spray skillet with Pam….pour in mix, spread blueberries over (frozen works) flip once. Makes 2 pancakes.
Use sugar free syrup….and not bad at all. If you get to a Cracker Barrel…get their sugar free….it’s the BEST and not gloppy like most. Tastes like the real deal. If you are not into better living through chemicals like me, forgo the sugar free syrup and have these with applesauce.
Also
I leave out the sweet stuff….and fruit…add some herbs…cook in skillet and it tastes like potato pancakes. I do that often and have it with meat…good stuff.
Good luck and sunshine from Daytona Beach
