Selection and Storage of Limes

The fruit with a light green skin tends to be juicier. Avoid those with brown discoloration. It may indicate the presence of scald which gives an unpleasant, moldy taste. The heavier the fruit, the juicier it is. Those with shiny skin promise to be fresher. Limes can stay fresh for up to 1 week when stored at room temperature. However, you must keep them away from sunlight otherwise they'll turn yellow. The flavor will also change. When stored in the refrigerator, they can keep fresh for up to 14 days. Wrap in a sealed plastic bag and place in the refrigerator crisper. It is best to keep them at room temperature before use. The fruit will yield more juice.
