Easy, Quick and Healthy Office Lunch
I found this great recipe and thought that it could be easily made into an office lunch.
This recipe is divided in 2 parts and can be made using a Microwave only.
Quinoa Pizza Bowls

Quinoa Pizza Bowls
Ingredients
- Cooked Quinoa
- Chopped veggies(whatever you like)
- Skim Mozzarella Cheese
- Pizza sauce
- Any seasoning or chilli flakes you prefer
Part 1: Cooking Quinoa
- Add 1 cup quinoa and 2 cup water in a microwave-safe bowl.
- Add salt according to taste.
- Cover the bowl with microwave-safe lid or aluminum foil.
- Microwave it for 15 minutes.
Part 2: Making Quinoa Pizza Bowls
- Put pizza sauce in a microwave-safe bowl
- Layer quinoa on top of the pizza sauce
- Cover the quinoa with shredded cheese
- Add finely chopped veggies
- Top the bowl with more shredded cheese
- Sprinkle some chili flakes on top
- Top off with a little capsicum and carrots
- Pack the bowl in aluminum foil and take it to office with you.
- Pop in the office microwave for 2 minutes and your lunch is ready.
