Quinoa - Really Healthy??

Quinoa
I was raised on it, high in protein and very filling. This is a recipe from back home:
1 cup quinoa
1 can crushed tomatoes
1/4 can tomato paste
1 small onion
2 celery sticks, finely diced
1 small pack of goya aderezo/recaito (you'll find it at most Latin stores)
2 tsp garlic
salt and pepper to taste
Add the garlic, celery stick and onion, cook over low heat until onion is transparent, add tomatoes and tomato paste, mix, add quinoa, add enough water to cover mixture, bring to a boil, let it simmer until quinoa looks like angel halos. Check and add more water as needed.

I am sorry she's suffering from that but I am still really puzzled by the question of why so many people seem to suffer from this. It wasn't anything that was prevalent among our grandparent's time. It makes me wonder if something drastic has happened to the food supply or if there is some other environmental contaminant that is causing this.
