Another use for Laughing Cow
 
Ok, so I am addicted to these little wedges of happiness!! :D

The other day I made a sandwich with one (Franz Thin Bread, Sundried Tomato and Basil Light Wedge, Roasted Red Peppers and Alfalfa Sprouts) that was just phenomenal!

Today I just used the same Sundried Tomato and Basil Light flavor with zucchini. I chopped a small zucchini (mine was about 95 grams) into 1/4 inch cubes. Sprayed a pan with olive oil spray. Sauteed zucchini on high until tender and turning brown (I like crunchy zucchini). When it looked done and edible I dumped in the chopped Laughing Cow wedge, removed the pan from the heat and stirred constantly for a few seconds. Poured the cheesy zucchini on a plate and allowed a little more stirring and time for all the cheese to melt.

It was extremely tasty and only came to just over 50 calories. I have to admit that it isn't very filling, but it makes a great veggie snack!

Anyone else have any unique recipes using these cheese wedges?? I have heard of using them to make omelets and that might be my next adventure.

Keep those great ideas coming! This is one I had never thought of, but sound wonderful!
I love using laughing cow on sandwiches. It doubles as a mayo replacement and a low cal cheese - yum!

Creamed Kale
 
Ok, I'm eating another successful cheese wedge recipe!

After a small disaster with kale chips, I had a bunch of kale wilting away in my fridge. Here is what I came up with.....

Pull kale from center stalk and break into pieces. After broken up, I had about 100 grams of kale chunks....50 cals.

Blanch kale (about 3-4 minutes)

Place kale in microwavable bowl and chop up a wedge of laughing cow on top (I used garlic and herb light....35 cals).

Cover lightly and microwave for about 45secs-1min on high to melt cheese.

Stir melted cheese into kale and sprinkle with garlic salt.

Done! A light and tasty version of creamed kale! I am not sure how much of the vitamins and nutrition I lost in the kale by blanching and making mushy, but it is yummy!

Sounds yummy - I had the most simple use of laughing cow, keep a box in the office fridge for mid afternoon starvation.

This page inspired me to try that old food of my youth, and I do like it!

But, one of you stole it - it was in my backpack when I left home, and not when I got here.

Please, whoever tracked me down, broke into my locker at the Y, stole my cheese (but not my wallet or cell phone), replaced the lock undamaged, fess up and return my cheese! :p:p

Looooooove Laughing Cow. One thing I do with it is put it, with some spinach, into boneless/skinless chicken breasts (just wrap the meat around it) and then lightly bread it with panko crumbs and put it in the oven. It gets all gooey inside and feels like something decadent.

I like getting a la tortilla factory rye tortilla and then heating it up for 30 seconds in the microwave then spreading one of the laughing cow cheese wedges on it then filling it with broccoli.

mmmmm....broccoli and cheese! Has anyone seen a cheddar variety of these? All mine are 'white'...they should make an 'orange' one!

I used a chipolte one to spread on top of an elk meat burger the other day. I think next time I will put it inside the burger for a cheezy middle. Yum!

I just smear it onto a slice of wasa bread (about 70 calories total), and pile it with cucumbers, peppers, tomatoes or sometimes a slice of thin deli meat for a fabulous open-face sammich. The crunchiness of the Wasa bread and the rich creaminess of the Laughing Cow makes you feel like you're not even depriving yourself, and it's a lovely breakfast, lunch or snack for about 100 calories total.

This sounds yummy too! I have put it on wasa before but not with other veggies.

I got Globe Zucchini at the Farmer's market - about the size and shape of a tennis ball - slice into fairly thick slices, and use those as the "bread" in a yummy sandwich - I used the blue cheese light Laughing Cow. Would be good with Hummus too.

I like to take one of those la tortilla factory tortillas and heat it up for 30 seconds in the microwave. I then spread the laughing cow cheese over it. Then I fill the tortilla with some cooked broccoli and wrap it up. I like the way this tastes :)

yesterday i tried laughing cow cheese for the first time...i'm hooked!!!! similar to rubystars' idea, i used a small tortilla, spread the cheese all over it (i used garlic & herb) and then added a cold cucumber spear. light, crunchy, delicious. then i liked it so much that later i had another one except that i added some chicken to it. this is now on my go-to list for low cal/low carb lunches.

I hate to be a naysayer but upon a second glance at this post I think you're miscalculating.

If your piece of bread is 70 calories, and the laughing cow cheese wedge is 35, then that's already 105 calories, before you add the vegetables. A slice of lunch meat runs you about 30-35 calories. That would, at the lowest, be 130 calories if you added that. A half of a medium cucumber is about 12 calories. Maybe you only use a quarter cucumber, so let's say 6 calories. So now we're up to 136. One small tomato is about 16 calories. So now we're up to 152. One quarter of a green pepper is about another 6 calories, so we're up to 158.

It's still low in calories, but it's not "about 100 calories total". I'm not trying to nitpick but if people read this thread it may be important for them to know what the actual calorie count is.

Wasa bread is 45 calories, so the Wasa plus the cheese is about 80 total.

Unfortunately, I dislike Wasa, but I like the idea of spreading on a tortilla...I may try that tonight.

I also like the idea of having it with a slice of deli turkey. I had gotten away from Laughing Cow because for 25 more calories using reduced fat block cheese, I could get 9 g protein instead of 2, so IMO those 25 cals were worth it, but the lunchmeat would add protein as well, so that's another option I have; thanks.

I hadn't used the LC cheese in a while and now I am back on the kick. I love the cheese on a cracker with cucumber (maybe even skip the cracker!) idea that someone had posted and ate that for a little while. Today I am going to have it with kale again, which is a favorite of mine.

As for Wasa. I love these crackers because, well....because I love crackers and these feel like they are diet approved. ;) Anyway, there are 2 different types of wasa crackers that I have come across. Regular and Lite. I don't have them in front of me but I think the regular are 45 calories for 1 cracker and the lite are 60 calories for 2 crackers. This might be causing some of the confusion in total calorie calculation for a wasa/cheese meal.

If you don't like wasa, I recently tried Wheat Thins Flatbread crackers and they are MUCH better. They aren't as filling or as thick at the wasa ones, but they have a lot of flavor and can even be eaten plain. I tried Tuscan Herb and you get 2 crackers for 60 calories....just an alternative cracker to try. :) (they taste great with a lite swiss LC cheese spread over 2 crackers and a slice of low fat pastrami on each...yum! Total comes to about 125cals....60 for crackers, 35 for cheese and 30 for pastrami.)

Anyway.....back to the cheese!! :D

I haven' tried the flatbread, but I like the Wheat Thins Fiber. My favorite, though, are the Triscuit Thin Crisps...just three ingredients :D.

Forget the shoes, it's gotta be the cheese ;).

I was just reading a weightloss/recipe blog and someone used a LC Cream Cheese wedge in their cauliflower "mashed potatoes"!!! That sounds brilliant! If you don't know, you can make fake mashed potatoes using cauliflower instead of potatoes. I have tried it once before and it wasn't bad, not the same as real potatoes but a fun alternative.....but adding cheese sounds really yummy! Cauliflower has been added to my grocery list for tomorrow. :)

I made spaghetti squash alfredo with it the other day. Cooked the spaghetti squash and shredded it as normal. Sautéed some mushrooms and onion (other veggies would work, but this is what I had on hand) and mixed with squash. Then I just smashed a couple of the cheese wedges into the mixture. It took about 6 wedges in total to make it creamy/cheesey but that came out to 4 servings.

I made this ahead of time and then reheated it when we were ready to eat. My husband sprinkled parm cheese on his and said it made it a million times better. :rolleyes:

CJ, have you tried the WASA sesame thins? I actually don't mind the regular WASA crackers, but they aren't my fav. The Thins, however, are a whole new thing. Very good! Oh and yes (back to the cheese), wonderful with LC cheese :p

I use the Weight Watchers wedges instead of Laughing Cow because (here) it's cheaper and lower calories, but they're essentially the same. Today, I made tiny veggie pizzas: 1/4 of whole wheat pita shell (50 calories) torn down the center to make 2 crusts, a smidgeon of low-cal marinara (>10 calories), mushrooms, onion, tomato and jalapeno (20 calories at most because you can't fit much on them and I have leftover veggies cut to put with dinner) and split one wedge of the cheese (30 calories) between both mini crusts. Then, I popped them in the toaster oven until the cheese started to melt and ate them with Progresso French Onion (50 calories). So, for approximately 160 calories, I tamed my pizza craving and had a hearty and healthy lunch.

Oh, and liberatedmist, I have leftover spaghetti squash to use in dinner tonight, and your alfredo idea sounds scrumptious!

I haven't been around for a little while, but made a new dish with laughing cow today! I had some leftover roasted butternut squash from last night's butternut squash "lasagna". I mashed it up with a wedge of the lite cinnamon cream cheese and microwaved it. :eek:

I believe these are processed. I do better avoiding processed food. You may wish to try farmer cheese. The low fat cheeses seem like wax with no flavor. Ricotta is another good choice. If I keep mayo in the fridge I'm in trouble, so I use avacado instead. . .emotional eater!
