Great Breakfast Choice
I love to eat breakfast, but find it hard to make it really healthy. While traveling I meet some Israeli travelers who introduced me to this delicious recipe that lets you have your eggs but still packs in all the veggies you should have. I know when you first look at it, you wonder what it would taste like, but I promise it is absolutely delicious!
This is a loose recipe, add a little more or less to adjust to your tastes.
Shakshouka
2-3 cloves garlic
onion
at least 2 different colored peppers
tomato
tomato sauce (or paste w/water)
eggs
olive oil (tsp)
salt, pepper to taste
chop and saute the garlic in the oil. While that sautes, chop the onion and add. Grind sea salt and add pepper to this mixture. Chop peppers and add. Then chop tomato and add. Stir occasionally. Add the tomato sauce and bring to a slow simmer. If the mixture is too thick, add a little water. It should be like a stew - not a soup. Crack and drop eggs into the mixture, creating a hole with a large spoon, and ladling the mixture over the top of the eggs in the mixture. Allow it to simmer until yolks are cooked thru - 10-15 minutes.
Variations - used canned tomatoes when fresh cost too much
try green tomatoes or tomatillos
try sweet onions
