Oh My Great Salsa
Oh My Great Salsa.
I've been experimenting making fresh salsa for the past month or so and based on the input from my friends and family, I think I've got it where I want it. I love the stuff.
I like food with hot spicy flavor because it stays with me longer and somehow makes me think I'm full as long as my mouth is still tingling.
I put the stuff on cheddar cheese flavored rice cakes (18 mini cakes for 140 calories) or low calorie toasted english muffins. My friends put in on burgers and hot dogs and scrambled eggs. I also like to just eat it by itself with just about any meal.
Everthing is diced except the garlic and I do it by hand because as long as I'm cookin', I'm not eatin'. Mix the following.
1 large tomato
1/2 large red or purple onion
3 jalapenos (fresh from the garden is best but any will work)
1 to 1 and 1/2 cups of chopped fresh cilantro
4 large cloves of garlic (crushed in a garlic press)
Cavender's Greek Seasoning to taste (greekseasoning.com) and...
Melinda's Naga Jolokia Hot Sauce (hotsauceworldcom) Go easy with just a couple of drops until you get it where you want it.

You can eat it by itself as sort of a "salad" with chicken or beef. I like to get the mini cheddar rice cakes which have less that 10 calories per cake. There are also vegetable chips that are close to 10 calories per chip as well. I swear it's really good just by itself though.
