Thanksgiving left overs
I know this is a little early, but what are some healthy things that y'all do with the leftovers?

Lettuce wraps: minced turkey, cucumber, celery, scallions tossed with a dash of soy & some chinese 5 spice (or Schechuan for the spicy style).

Turkey soup, but by then I'm usually so sick of turkey that the soup ends up in the freezer or the dogs get a real treat.

Today for lunch I had a spinach salad with turkey, tomatoes, egg, and vinaigrette dressing. Then I had a hot turkey sandwich for dinner (open faced bread, mashed potatoes, turkey and gravy) with leftover stuffing and green bean casserole. I also make egg noodles with turkey and gravy from canned low sodium broth, which is much healthier than the turkey drippings-and-butter gravy I had on my potatoes today. I'm looking into making a shepherd's pie or pot pie, but haven't found a good recipe yet.

Turkey Waldorf - chopped turkey, apple, celery, walnuts, dried cranberries. Mix with plain nonfat greek yogurt. Serve on a bed of shredded lettuce.
