Wuick Chili
Quick chili recipe (low carb, low fat, veggies)
1 pound lowest fat ground meat you can find--works with turkey, beef, etc.
2 tsp favorite chili powder
1 tsp ground cumin
1 tsp ground coriander
1 tsp garlic, minced
3/4 cup favorite tomato-based salsa
Salt/pepper to taste
In a large pot, cook meat over medium heat. Drain meat of any fat and rinse in hot water.
Put meat back into po. Add spices and salsa. Stir to mix. Cover and simmer on low heat for 10 minutes. Serves 4.
Many chili recipes have cornmeal as a thickener. I don't eat corn, but I use flaxseed meal instead of cornmeal for a thickener and it works really well.
I also used 5 pounds of meat and multiplied all the ingredients likewise to make enough chili for several meals.
Feel free to top with whatever you desire--cheese, sour cream, plain Greek yogurt, chopped tomatoes, hot sauce, oyster crackers, etc.
