I love mushrooms
Hi i am thinking what should i make today for dinner,and i found this recipe :
‘CREAM’ OF MUSHROOM SOUP
Ingredients
2 avocados, peeled and pitted
juice of 1/2 grapefruit
1 clove garlic
2 cups hot water
1 Tbs coconut oil
1 cup mushrooms, sliced
1 red sweet pepper, diced
1/4 small yellow onion, finely minced
2 tomatoes, diced
3-4 sprigs fresh basil
Instructions
In a food processor, blend avocado, grapefruit juice, garlic and hot water. Set aside.
Meanwhile, heat a medium pan with tall sides over medium-high heat. Add coconut oil.
Saute mushrooms, sweet pepper, onion, tomato, and basil until they begin to soften.
Add avocado mixture and heat through.
What do you think ?Cuz i not so sure about the grapefruit ..

I think the grapefruit juice sounds like an odd addition...but I've never seen or tried a recipe like this so who knows...maybe it's great! I'm thinking the addition of the grapefruit may keep the avocado from turning brown? Here's another variation of homemade cream of soup that I have tried and it's quite good!


Cream of Mushroom Soup
Makes 8 Servings

1/4 cup butter
1 pound fresh mushrooms, sliced
1/4 cup all-purpose flour
3 cans chicken broth, low or no sodium
1 cube beef bouillon
1 cup evaporated skim milk (or if calories aren't a concern, use heavy cream)
Salt and pepper to taste

In a large saucepan, melt butter over medium heat. Cook mushrooms in butter 5 minutes. Sprinkle flour over mushrooms. Pour in broth, a little at a time, stirring constantly. Stir in bouillon cube. Bring to a boil, then remove from heat and stir in evaporated skim milk. Heat through, without boiling. Serve.

Yum! Debbie...your recipe sounds very tasty!

I don't think I would like some of the ingredients listed in the first version though. I don't like avocado or grapefruit.

MissClara's soup looks interesting. The difference is in that it is a 'cream' soup without dairy!

MissClara's soup appears to be interesting. The actual distinction was in that it must be the 'cream' soup with no dairy products!

It's really Delicious i have ordered it's recipe from an online shopping store kodwhat.com, its really good. I suggest you guys to try this.
