Personally, I'm not surprised that you are gorging on junk food in the evening if you're only eating 500 calories during the day. You're effectively telling your body that it's starving. Then it fights back by subjecting you to these cravings in the evening when you're at home, possibly not busy, and less able to resist them.

There's a saying which goes something like "Breakfast like a King, lunch like a Prince, dine like a pauper". I think a lot of people underestimate the importance of breakfast which is probably the most critical meal of the day, eating after an eight or ten hour fast.

Why not try balancing your calorie/carb intake evenly during the day with more emphasis on breakfast and lunch? It's worth a try
