I like hollowing out tomatoes and filling it with tuna seasoned with a pinch of salt and pepper, then popping it in the oven for about 10mins. Once the tomato is a bit soft and the tuna is warm, add some aceto vinegar and serve with some rocket and couscous. Really simple and easy
