Vegetarian snacks are a great way to satisfy your hunger between meals without worrying about excess calories. Vegetarian snacks are no longer just for vegetarians. If you are looking for snacks that are tasty, nutritious and low in fat, here are some snack recipes that you can try.
1. Vegetarian Chinese Noodles
To prepare some vegetarian Chinese noodles, start by boiling some water and adding the noodles. Once the noodles are added, allow the water to boil for about four more minutes or until the noodles are tender but firm. Drain the noodles and place them in a bowl. Add about half a tablespoon of vegetable oil and set the bowl aside. Heat about a tablespoon of vegetable oil in a pan. Once the oil is hot, add some chopped garlic, onion and ginger. Saute the spices for a couple of minutes. Start adding some chopped green beans. Allow the beans to cook a bit before adding some shredded cabbage, shelled green peas and strips of capsicum. Add chopped tomatoes, pepper powder, salt and tomato ketchup. If you wish, you can also add some soy sauce. Combine the vegetable mixture with the noodles and stir well.
2. Potato Pancakes
Potato pancakes not only make great snacks, but they can also be served for breakfast. The first thing you need to do is prepare the pancake batter. And don't worry, it won't include eggs. Mix together some grated potatoes with grated onions. Add flour, pepper powder, baking powder and a bit of salt. You can also add baking soda if you wish. Add water or milk to the mixture until your batter reaches the desired consistency. The batter should be able to pour slowly. Remember not to add too much water or milk, or you will make the mixture too watery. Spread oil on a pan over medium heat. Add about a cup of batter in such a way that it makes a thick circle. Cook for about two minutes before flipping to cook the other side.
3. Microwave Popcorn
If you like munching on snacks while watching TV, microwave popcorn may be an ideal vegetarian snack for you. Avoid buying the packaged microwave popcorn in grocery stores, because these are usually filled with fattening flavorings. Instead, make your own at home so you can be sure of the ingredients and quality. Start by placing a half cup of kernels in a brown paper lunch bag. Fold the top over itself twice and make sure to seal it firmly. Place the brown paper bag on the turntable of the microwave. Cook on high heat for several minutes or until there is a five-second pause between the pops. Pour the popcorn in a bowl and add some salt.
