If you're not fond of green foods such as lettuce, broccoli and spinach, you aren't alone. While it can be impossible to get kids to eat these kinds of foods, adults can be just as stubborn. But this doesn't mean that your nutritional status has to suffer. Here are some great vegetables that contain all the vitamins, minerals and other nutrients that your body needs to function properly.

1. Cauliflower

Cauliflower is one of the best substitutes for green foods, especially broccoli and brussel sprouts. Unlike the greens, which have a relatively bold taste, cauliflower is mild yet has a texture similar to the two items mentioned. This means that you can use a variety of different types of herbs and spices to alter the flavor of cauliflower, while at the same time maintaining its healthy vitamins, minerals and fiber. One great way to serve cauliflower is by grilling it. Cut the cauliflower into small, uniform pieces. Carefully place the cut cauliflower onto a grill pan or into an aluminum foil pouch, and grill for at least 10 minutes on each side. If you live in an area where it is difficult to find fresh carrots year round, don't worry. Research has found that frozen carrots contain the same amounts of vitamins and minerals as their fresh counterparts. For best results, look for carrots in their most natural form. This means free from added salt, seasonings and other products that could potentially interfere with the taste and nutritional quality. Not only will these carrots be delicious, but they are typically lower in price than fresh vegetables. This means that you can save some more of that hard earned cash.

3. Squash

Squash makes a great alternative to cucumbers and other greens that are typically used in salads. Squash come in a variety of sizes and flavors, so it is up to you to find the kind that best meets the tastes of you and your family. While squash is most often baked, it can also be grilled, steamed or even stir fried. Experiment with the cooking methods that you use, as well as the types of squash.
