Sweet Potato Fries

Got a fry craving? French fries are one of the most commonly craved foods for many dieters but if you know anything about good nutrition, you know that these shouldn’t be a part of your regular diet plan.

Fortunately, you can prepare your own delicious sweet potato fries without too much trouble. Simply slice sweet potatoes into thin slices and then coat with a little bit of olive oil. Toss on some salt, pepper, and paprika (or any spices you desire), and then spread them out on a non-stick baking sheet. The thinner you can dice these sweet potatoes, the crispier they will be.

Now place them in the oven and bake at 375 degrees for 20-25 minutes or until tender. Serve with some low sugar ketchup.

Mashed Sweet Potatoes

Mashed sweet potatoes are another delicious way to serve this vegetable and can easily replace traditional high calorie regular mashed potatoes.

Simply peel the sweet potatoes and boil them until tender. Then place them in a pot, drained, and mash with an electric beater adding a little milk or unsweetened almond milk to the pot. If you really want these to taste delicious, try adding a tablespoon of coconut oil as well. This is a fantastic way to get some healthy fats in as well.

When you consume a dose of healthy fats with your sweet potatoes, it can actually help you increase your intake of the beta carotene found in the potatoes as well.

Baked Sweet Potatoes

Baked sweet potato cubes make for the perfect side dish to any meal and can easily last for up to 4-5 days in the fridge as well. Make a big batch and you can be eating these for leftovers for many days to come.

Simply dice the sweet potatoes and then coat with a little olive oil. Sprinkle over top some cinnamon, salt, garlic, and rosemary. Toss to coat and then place on a non-stick baking sheet.

Bake at 350 degrees for around 35 minutes or so until tender.

Sweet Potato Pancakes

Finally, don’t overlook the pancake! You can actually make delicious tasting sweet potato pancakes as well. Simply mix together ½ cup of mashed sweet potato (boiled and mashed beforehand), one mashed banana, and one whole egg. Once this batter has formed, pour onto a hot skillet and cook for 2-3 minutes per side, flipping at halftime.
